  • 4 large zucchini
  • 1 cup ricotta cheese
  • 0.5 cup parmesan cheese
  • 0.25 cup fresh basil
  • 2 cloves garlic
  • 0.5 cup mozzarella cheese
  • 2 cups marinara sauce

Method
 

Preparation Steps
  1. Preheat oven to 400°F. Spread 1/2 cup marinara sauce on the bottom of a baking dish.
  2. Slice zucchini lengthwise into 1/4-inch thick strips using a mandolin.
  3. Grill zucchini slices on high heat for about 2 minutes per side until pliable and grill marks appear.
  4. Mix ricotta, Parmesan, chopped basil, minced garlic, and 1/4 teaspoon each of salt and pepper in a bowl.
  5. Spread about 1.5 tablespoons of cheese mixture on each zucchini slice.
  6. Roll up each zucchini slice and place seam side down in the prepared dish.
  7. Top each roll with 1 tablespoon marinara sauce and sprinkle with mozzarella cheese.
  8. Bake for 25 minutes until cheese is melted and bubbly.

Notes

Feel free to add cooked ground meat or extra herbs for variation.
