  • 1 pound zucchini
  • 1 cup corn kernels
  • 0.25 cup grated parmesan cheese
  • 0.25 cup grated yellow onion
  • 1 clove garlic finely minced
  • 1 tablespoon dried parsley
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon paprika
  • 2 eggs eggs lightly beaten
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • cooking oil spray cooking oil spray
  • sour cream, yogurt, herb dip, ranch dressing for serving, optional

Method
 

Preparation Steps
  1. Preheat the air fryer to 360°F.
  2. Shred the zucchini using a box grater; transfer to a towel and squeeze out excess water. Set aside.
  3. In a large bowl, combine zucchini, corn kernels, Parmesan cheese, onion, garlic, parsley, salt, pepper, basil, oregano, paprika, and beaten eggs. Mix well.
  4. Add almond flour and baking powder; stir until fully incorporated. Adjust flour amount if mixture is too wet.
  5. Shape the mixture into 10 to 12 patties.
  6. Optional: Freeze patties for 5-8 minutes to hold their shape.
  7. Spray the air fryer basket with cooking spray. Place patties in a single layer, spray tops with oil.
  8. Cook for 6 minutes, flip, spray again, and cook for an additional 6-8 minutes until golden brown.
  9. Remove from the air fryer and serve with sour cream, yogurt, or your preferred dip.
