  • 0.666 cup whole milk Greek yogurt
  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice + 1 tsp lemon zest
  • 1 Tbsp minced garlic
  • 1 Tbsp peeled and minced fresh ginger
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 0.25 tsp cayenne pepper
  • 0.25 tsp cinnamon
  • 1 tsp salt and freshly ground black pepper to taste
  • 0.25 cup chopped cilantro plus more for serving
  • 2.25 lbs boneless skinless chicken thighs about 4 thighs

Preparation Steps
  1. In a mixing bowl, whisk together yogurt, olive oil, lemon juice, lemon zest, garlic, ginger, cumin, coriander, paprika, cayenne pepper, cinnamon, salt, and cilantro.
  2. Place chicken in a large resealable plastic bag. Pour the marinade over the chicken, seal, and massage to coat evenly.
  3. Refrigerate for at least 2 hours, up to 24 hours for maximum flavor.
  4. Preheat grill to medium-high heat. Remove chicken from marinade and grill until cooked through, about 6-8 minutes per side or until internal temperature reaches 165°F.
  5. Serve hot garnished with fresh cilantro.

Notes

For a baked version, cook in an oven at 400°F for 20-25 minutes.
