  • 1.25 lb homemade turkey sausage meat
  • 2 tsp olive oil
  • 1 clove garlic (minced)
  • 0.5 bunch kale leaves removed from ribs and roughly chopped
  • 1 cup Cannellini or Northern beans drained and rinsed
  • 4 cups fat free chicken stock
  • 2 cups water
  • 1 small pinch dried red pepper flakes optional
  • salt and freshly ground pepper to taste

Method
 

Preparation Steps
  1. Heat olive oil in a medium-sized pot over medium-high heat.
  2. Add turkey sausage and cook, breaking it apart with a spatula until browned and cooked through.
  3. Add minced garlic and cook for 2-3 minutes until fragrant, careful not to burn the garlic.
  4. Pour in chicken stock and water, then add drained beans and red pepper flakes (if using). Stir to combine.
  5. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10 minutes.
  6. Add in chopped kale, season with salt and pepper, and let simmer for another 10 minutes until the kale is tender.
  7. Taste and adjust seasonings as needed. Divide into bowls and serve hot.
