Preparation Steps
- Preheat oven to 400°F. In a large skillet, melt butter over medium heat. Add flour and whisk to create a roux, cooking for 2 minutes.
- Gradually whisk in chicken broth and milk, stirring constantly until the mixture thickens, about 5 minutes.
- Stir in thyme, salt, and pepper. Add cooked turkey and mixed vegetables, cook for another 5 minutes.
- Pour the filling into a pie crust placed in a 9-inch pie dish. Cover with the second pie crust and seal the edges.
- Cut small slits on top crust. Bake in the preheated oven for 35-40 minutes until golden brown.
