  • 1.3 pounds ground turkey (93% lean)
  • 0.25 cup seasoned breadcrumbs
  • 0.25 cup Pecorino Romano cheese
  • 0.25 cup fresh parsley, finely chopped
  • 1 large egg
  • 1 clove garlic, grated or minced
  • 1 teaspoon kosher salt
  • 2 teaspoons olive oil, extra virgin
  • 4 cloves garlic, smashed
  • 2 28 oz cans crushed tomatoes
  • 0.5 small onion, cut in half
  • 1 teaspoon dried oregano
  • 0.25 cup chopped fresh basil
  • to taste kosher salt and black pepper

Method
 

Preparation Steps
  1. In a medium pot, heat olive oil over medium heat. Add garlic and sauté until golden. Add crushed tomatoes, onion, salt, oregano, basil, and bay leaf. Stir and simmer on low for 5 to 10 minutes.
  2. Meanwhile, in a large bowl, combine ground turkey, breadcrumbs, egg, parsley, garlic, and cheese. Mix until well combined. Form into small meatballs, about 1/8 cup each.
  3. Brown meatballs in a skillet or bake at 400°F for 18 to 20 minutes. Alternatively, add uncooked meatballs directly into the sauce to simmer.
  4. Add meatballs to the sauce and simmer on low for about 20 minutes. Remove bay leaf and onion, then serve over pasta or bread.
