  • 1 tablespoon olive oil
  • 1 onion yellow onion
  • 2 cloves garlic
  • 4 cups vegetable broth
  • 1 tablespoon tomato paste
  • 0.5 teaspoon sugar
  • 0.5 cup heavy cream
  • 1 teaspoon salt
  • 0.25 teaspoon black pepper

Method
 

Preparation Steps
  1. Heat the olive oil in a large pot over medium heat. Add chopped onions and garlic; cook until softened, about 5 minutes.
  2. Add chopped tomatoes, tomato paste, and sugar; cook for another 5 minutes, stirring occasionally.
  3. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Use an immersion blender to puree the soup until smooth. Stir in heavy cream, salt, and pepper. Heat through and serve.

Notes

You can garnish with fresh basil or grated cheese if desired.
