- Heat olive oil in a skillet over medium heat. Brown ground beef and onions until beef is no longer pink and onions are soft.
- Add taco seasoning, Rotel tomatoes (including juice), spaghetti noodles, and water to the skillet.
- Bring to a boil over high heat. Reduce heat to low, cover, and simmer for 15 minutes until noodles are cooked and liquid is absorbed.
- Remove from heat. Stir in half of the shredded cheese until melted and well combined.
- Top with remaining cheese and chopped cilantro before serving.
