Preparation Steps
  1. Preheat the oven to 400°F. Prick the sweet potato a few times and bake until soft, about 1 hour. Let it cool completely.
  2. Peel the sweet potato, discard skin, and mash in a bowl. Mix in olive oil, milk, maple syrup, and vanilla.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt. Fold dry ingredients into the wet mixture.
  4. Line a 12-cup muffin tin with liners or grease. Distribute batter evenly among cups.
  5. Bake for 20 minutes. Brush tops with extra maple syrup and bake 5 more minutes until a toothpick comes out clean.
  6. Allow muffins to cool before serving.
