Preparation Steps
- Preheat oven to 375°F. Roll out the pie crust and fit it into a pie dish. Bake for 10 minutes to blind bake.
- In a skillet, heat olive oil over medium heat. Sauté spinach until wilted. Let it cool slightly.
- In a bowl, whisk eggs, heavy cream, salt, and black pepper. Add sautéed spinach and crumbled feta cheese.
- Pour the mixture into the pre-baked pie crust. Bake for 35 minutes until set and golden.
- Let the quiche cool for 10 minutes before slicing and serving.

Best served warm or at room temperature. Can be stored in the refrigerator for up to 2 days.
