Ingredients
  

Main Ingredients
  • 3 pieces boneless skinless chicken breasts cooked and chopped
  • 1 cup chopped yellow onion
  • 1 cup chopped green pepper
  • 1 cup diced jalapeno pepper
  • 2 cloves garlic minced
  • 1 tbsp chili powder
  • 2 tsp cumin
  • 2 cans chicken broth 14.5oz each
  • 1 can diced tomatoes 28oz
  • 1 cup frozen corn
  • 1 cup uncooked long grain rice
  • 1 tbsp lime juice
  • salt and pepper to taste

Method
 

Preparation Steps
  1. Add all ingredients except the rice to a 6-quart slow cooker and stir to combine.
  2. Cover and cook on HIGH for 4 hours.
  3. Towards the end of the cooking time, cook the rice according to package directions. Add to soup mixture at the end of the cooking time and stir together.
  4. Ladle into bowls and garnish with chopped avocado, tortilla chips, cilantro, and/or sour cream.
