Preparation Steps
- Spray a 5-7 quart slow cooker with nonstick cooking spray.
- Add soup, chicken stock, salt, pepper, and thyme into the crockpot, stirring to combine. Place chicken breasts in the mixture and top with mushrooms.
- Cover and cook on high for 2 to 3 hours or low for 4 to 6 hours, until chicken is cooked through.
- Remove chicken and let rest for a few minutes. Mix cornstarch and water, then stir into the crockpot mixture. Cover and cook on high for a few more minutes until thickened.
- Shred chicken and return to sauce. Serve over rice or vegetables, or enjoy as is.
