  • 0.75 pound cooked shrimp peeled, weight after peeled
  • 2 stalks celery chopped
  • 1 tablespoon red onion chopped
  • 2 tablespoons light mayonnaise check label for Keto
  • 1 tablespoon fat free Greek yogurt full fat for Keto
  • 1 pinch seasoning salt
  • 1 pinch fresh ground pepper
  • 30 slices cucumber about 1 large
  • 2 tablespoons chopped chives for garnish

Method
 

Preparation Steps
  1. Combine cooked shrimp, chopped celery, red onion, mayonnaise, Greek yogurt, seasoning salt, and pepper in a bowl. Mix well.
  2. Arrange cucumber slices on a serving platter. Top each slice with a heaping tablespoon of shrimp salad.
  3. Garnish the shrimp salad on each cucumber slice with chopped chives.
