  • 3 tablespoons almond butter
  • 1 tablespoon olive oil
  • 2 tablespoons freshly squeezed orange juice
  • 3 tablespoons water
  • 1 tablespoon stoneground mustard
  • 0.5 tablespoon raw honey
  • 0.25 teaspoon salt
  • 1 clove garlic

Preparation Steps
  1. Heat the olive oil in a large skillet over medium high heat. Season chicken with salt, pepper, and chili powder. Sauté until cooked through and golden, then set aside to cool.
  2. Chop all vegetables and fruits. Slice the cooled chicken into bite-sized pieces. Combine all ingredients in a large bowl, toss to combine, and chill.
  3. For the dressing, blend almond butter, olive oil, orange juice, water, mustard, honey, garlic, and salt until smooth. Adjust seasonings as needed.
  4. Pour the dressing over the salad, toss well, and serve immediately.
