Preparation Steps
- Preheat oven to 400°F. Roast poblano peppers until charred, then peel, seed, and slice.
- In a skillet, heat olive oil over medium heat. Add chicken breasts and cook until browned on both sides, about 4 minutes per side. Remove and set aside.
- In the same skillet, add garlic and cook until fragrant, about 1 minute. Add roasted poblano peppers, chicken broth, cumin, chili powder, oregano, paprika, salt, and pepper. Bring to a simmer.
- Return chicken to the skillet, cover, and simmer for 15 minutes, until the chicken is cooked through and flavors meld.
- Remove chicken, slice, and serve topped with the sauce and peppers.
