  • 1 teaspoon fresh lemon juice
  • 0.25 cup white sugar
  • 0.25 cup brown sugar
  • 0.125 teaspoon nutmeg
  • 2 teaspoons cornstarch
  • 2 cups all-purpose flour
  • 0.5 cup white sugar
  • 0.5 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 12 tablespoons butter chilled and grated
  • 0.5 cup boiling water

Preparation Steps
  1. Preheat oven to 425°F. Place a large baking sheet covered in foil on the lowest rack in the oven. This prevents overflow mess.
  2. In a large bowl, combine sliced peaches, lemon juice, white sugar, brown sugar, nutmeg, and cornstarch. Mix well and pour into a 9x13 baking dish.
  3. Bake the peach filling for 10 minutes to start softening the fruit.
  4. In a bowl, whisk together dry topping ingredients. Toss in grated butter until crumbly. Stir in boiling water just until combined, with some lumps remaining.
  5. Drop spoonfuls of the topping over the hot peach filling. Bake until golden, about 28 minutes.
  6. Serve warm or at room temperature. Optionally, sprinkle with cinnamon sugar topping before serving.

Notes

This peach cobbler is best enjoyed with a scoop of vanilla ice cream.
