Preparation Steps
- Preheat your oven to 450°F.
- Dry your cauliflower well and slice in half to create steaks. Transfer to your baking sheet.
- In a small bowl, whisk together olive oil, parmesan, garlic, spices. Brush the cauliflower steaks with this mixture on all sides. Dip one side in parmesan and place on the baking sheet with the parmesan side down.
- Bake for 10 minutes, then reduce temperature to 425°F and bake for an additional 20-25 minutes until crispy and golden.
- Prepare the avocado dip: blend avocado, scallions, lime juice, jalapeño, olive oil, parmesan or nutritional yeast, parsely, water, and salt and pepper until smooth. Serve the cauliflower steaks topped with the dip.
Notes
Feel free to add extra herbs or spices for more flavor.
