Preparation Steps
- Preheat your grill to 400F degrees.
- If your chicken breasts are thick, butterfly them and add to a Ziploc bag. Gently pound to about ΒΌ inch thickness.
- Add olive oil, lime juice, lime zest, garlic slices, salt, and pepper to the bag. Massage to coat.
- Marinate the chicken for 20-25 minutes while preparing the pineapple salsa.
- Dice the grilled pineapple and add to a bowl. Mix in the corn, jalapeno, red bell pepper, and shallots. Add lime juice and salt, then mix well.
- Place a sheet of foil on the grill. Place the chicken on the foil to prevent sticking and grill for about 3 minutes per side.
- Remove chicken from grill and serve topped with pineapple salsa and optional garnishes.
- Serve immediately with lime wedges.
Notes
For an extra touch, garnish with fresh cilantro or sliced scallions.
