  • 2 tbsp vegetable oil
  • 1 cups sugar
  • 2 large eggs
  • 0.25 cups fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 6 tbsp milk
  • 0.25 cups lemon juice
  • 3 tbsp powdered sugar
  • 1 cups powdered sugar
  • 1 tbsp lemon juice
  • 1 tbsp heavy cream

Method
 

Preparation Steps
  1. Preheat oven to 350°F. Grease a 9x5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Cream the butter, oil, and sugar in a large bowl until light and fluffy, about 4-6 minutes.
  4. Add eggs one at a time, beating well after each addition.
  5. Stir in lemon juice, lemon zest, and vanilla extract.
  6. Alternately add dry ingredients and milk, beginning and ending with dry ingredients, mixing until just combined.
  7. Pour batter into prepared loaf pan and bake for 50 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in pan for 15 minutes, then remove and cool completely on a wire rack.
  9. Make lemon glaze by mixing powdered sugar, lemon juice, and heavy cream, then drizzle over cooled cake.
