Preparation Steps
- Measure the lemon zest and juice, and prepare the butter. Set aside.
- In a double boiler, whisk together egg yolks and sugar over simmering water.
- Add lemon juice and zest to the mixture, whisking until slightly thickened, about 8-9 minutes.
- Remove from heat and gradually whisk in cold butter until smooth. Transfer to a container and refrigerate until cooled and thickened, about 2 hours.
