  • 2 tablespoons lemon zest
  • 1 tablespoon lemon juice
  • 2 teaspoons lemon extract
  • 0.5 cup vegetable oil
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon kosher salt
  • 8 oz cream cheese
  • 0.5 cup confectioners' sugar

Method
 

Preparation Steps
  1. Preheat oven to 350°F and prepare a loaf pan with nonstick spray.
  2. In a stand mixer, beat eggs, sugar, sour cream, lemon zest, lemon juice, and lemon extract until creamy. Gradually add oil into the mixture.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Add dry ingredients to wet mixture and mix until just combined. Set aside.
  5. Beat cream cheese until smooth. Mix in confectioners' sugar until well combined.
  6. Pour half of the batter into the loaf pan, then add half of the cream cheese mixture on top.
  7. Swirl the cream cheese mixture into the batter with a knife. Repeat layers with remaining batter and cream cheese.
  8. Bake for 75 minutes or until a toothpick inserted comes out clean. Cool before serving.
