  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1 pound sweet Italian sausage, casings removed
  • 4 cups low sodium chicken broth
  • 28 ounces crushed tomatoes
  • 2 tablespoons tomato paste
  • 1.5 teaspoons dried Italian herb blend
  • 2 tablespoons sugar (optional)
  • to taste salt and pepper
  • 9 pieces lasagna noodles, broken into medium pieces
  • 0.25 cup heavy cream
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 0.33 cup parmesan cheese, grated
  • 3 tablespoons fresh basil, chopped

Method
 

Preparation Steps
  1. In a large pot, heat olive oil over medium high heat. Add diced onion and cook for a few minutes. Add minced garlic and cook for 30 seconds. Add sausage and break it up with a spoon, cooking until no longer pink, about 5 minutes. Drain excess fat if desired.
  2. Add chicken broth, crushed tomatoes, tomato paste, Italian herbs, sugar (if using), salt, and pepper. Stir to combine and bring to a boil. Reduce heat, cover, and simmer for 10 minutes.
  3. Add broken lasagna noodles to the pot, stir, cover, and cook another 10 minutes or until al dente. Stir in heavy cream right before serving.
  4. In a bowl, mix ricotta, mozzarella, parmesan, chopped basil, salt, and pepper. Serve soup hot with a scoop of the cheese mixture on top.
