Preparation Steps
- Bring a large pot of salted water to a boil. When boiling, add the pasta and cook until just under al dente according to package directions.
- Preheat oven to 375°F. Spray a deep casserole dish with cooking spray and set aside.
- In a medium saucepan over medium-high heat, melt the butter. Add the red onion and sauté for 3 minutes. Add garlic and sauté for 1 minute.
- Sprinkle flour over the onion mixture and stir, cooking for 2-3 minutes.
- Gradually add milk, whisking until the mixture boils and thickens.
- Remove from heat and stir in mozzarella and one-third of the feta cheese until melted. Add oregano, marjoram, and pepper.
- Stir in tomatoes, olives, and spinach. Season with salt as needed.
- Drain the pasta slightly under al dente and transfer to the casserole dish. Pour the sauce over the pasta and top with remaining feta.
- Bake for 20-22 minutes until golden on top. Garnish with dill or parsley before serving.
