  • 1 red red bell pepper, diced
  • 2 cups kale, chopped
  • 2 teaspoons dried oregano

  • 1 teaspoons kosher salt
  • 3 tablespoons tomato paste
  • 1 cups uncooked orzo
  • 1 can diced fire-roasted tomatoes (14 oz)
  • 1 to 2.0 cooked chicken or chickpeas
  • 2.5 cups vegetable or chicken broth
  • 1 tablespoons butter (optional)
  • 0.5 cup feta cheese, crumbled (optional)
  • 3 tablespoons fresh dill, chopped (optional)
  • 1 lemon lemon wedges for serving (optional)

Method
 

Preparation Steps
  1. Preheat the oven to 400°F.
  2. In a large oven-safe skillet, heat olive oil over medium heat. Add diced onion and sauté for 5 minutes until soft.
  3. Add minced garlic, diced red bell pepper, chopped kale, oregano, red pepper flakes, and salt. Cook for another 5 minutes until kale wilts.
  4. Stir in tomato paste and cook for 1-2 minutes.
  5. Add uncooked orzo, fire-roasted tomatoes, cooked chicken or chickpeas, and broth. Bring to a simmer.
  6. Bake uncovered for 10-15 minutes until orzo is tender.
  7. Finish by stirring in butter (if using), crumbling feta over the top, and sprinkling with dill. Serve with lemon wedges if desired.
