  • 5 egg whites egg whites (room temperature)
  • 0.75 cup buttermilk
  • 0.75 cup unsalted butter (softened)
  • 1.75 cups granulated sugar
  • 2.5 cups cake flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon kosher salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon ground ginger
  • 2 packages cream cheese, softened (8 ounce each)
  • 0.666 cup granulated sugar
  • 0.25 cup sour cream
  • 0.33 cup heavy cream
  • 0.5 teaspoon rum flavoring
  • 0.5 teaspoon nutmeg
  • 1 cup unsalted butter (softened)
  • 1.5 teaspoons nutmeg
  • 1 teaspoon rum flavoring
  • 4 cups powdered sugar
  • 0.25 cup low fat eggnog

Method
 

Preparation Steps
  1. In small bowl, mix egg whites and 0.25 cup buttermilk. Set aside.
  2. In mixing bowl, beat butter and sugar until creamy, about 2-3 minutes. Add dry ingredients and mix until combined. Slowly add egg white mixture. Beat in remaining buttermilk.
  3. Bake at 350°F for 25-30 minutes. Remove and cool on wire rack.
  4. Preheat oven to 325°F. Prepare springform pan by wrapping bottom with foil. Beat cream cheese with sugar until creamy. Add salt and eggs, then sour cream and heavy cream. Pour into prepared pan, place in larger pan with hot water, and bake for 45 minutes. Cool completely in pan.
  5. When cooled, remove from pan and freeze for at least 1 hour.
  6. Beat butter until fluffy. Add nutmeg, rum flavoring, powdered sugar, and eggnog; beat until fluffy. Assemble cake layers and frost with eggnog frosting.
