- Wash the strawberries thoroughly and dry them completely. Cut each into halves and set aside.
- Beat the softened cream cheese in a mixing bowl until smooth and fluffy.
- Add the powdered sugar gradually and beat until fully incorporated. Pour in heavy cream and add vanilla extract, then beat until the mixture is creamy and smooth.
- Using a piping bag or spoon, dollop the cream cheese mixture onto the cut surfaces of the strawberries.
- Prepare the strawberry crunch topping by crushing cookies and mixing with melted butter and strawberry gelatin, then bake until golden. Cool completely.
- Sprinkle the berry tops with the strawberry crunch topping and serve immediately.
