  • 6 large hardboiled eggs
  • 8 ounces small pasta (ditalini, penne, or elbow macaroni)
  • 0.75 cup mayonnaise
  • 1.5 tablespoons dijon mustard
  • 1 teaspoon white vinegar
  • 1 clove garlic, minced
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon smoked paprika
  • 0.25 teaspoon cayenne pepper
  • 2 tablespoons red onion, finely chopped
  • 2 tablespoons green onions sliced
  • 0.25 cup cooked bacon, crumbled (optional)

Method
 

Preparation Steps
  1. Cook the pasta according to package instructions, adding a generous amount of salt to the water. Drain and rinse with cold water. Peel the eggs and separate the yolks from the whites.
  2. Chop the egg whites and set aside. Mash the yolks with a fork or press through a fine sieve into a large mixing bowl. Add mayonnaise, mustard, vinegar, garlic, salt, paprika, and cayenne pepper. Mix well.
  3. Add cooked pasta to the dressing and stir to coat. Mix in red onion, green onions, and chopped egg whites. If using, fold in the crumbled bacon. Chill or serve immediately garnished with extra green onions and paprika.

Notes

This salad is best served chilled. Adjust seasonings to taste.
