  • 6 pieces hard-boiled eggs
  • 8 ounces small pasta (penne or elbow macaroni)
  • 0.75 cup mayonnaise
  • 1.5 tablespoons dijon mustard
  • 1 teaspoon white vinegar or lemon juice
  • 1 cloves garlic, minced
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon smoked paprika
  • 0.25 teaspoon cayenne pepper
  • 2 tablespoons red onion, finely chopped
  • 2 tablespoons green onions
  • 0.25 cup cooked and crumbled bacon (optional)

Method
 

Preparation Steps
  1. Cook the pasta according to package instructions, adding a generous amount of salt to the water. Drain and rinse until cooled. Peel the eggs and separate yolks from whites.
  2. Chop the egg whites. Mash the yolks into a fine powder or pass through a sieve. In a large bowl, whisk together the yolks, mayonnaise, mustard, vinegar, garlic, salt, paprika, and cayenne pepper.
  3. Add the cooked pasta, red onion, green onions, and chopped egg whites to the dressing. Toss to combine. Top with crumbled bacon if desired.
  4. Serve immediately or refrigerate until ready to serve. Garnish with extra green onions and paprika if desired.

Notes

This pasta salad is best served chilled and can be prepared ahead of time for convenience.
