Preparation Steps
- Preheat oven to 400°F. Spread bacon on a baking sheet and bake for 16-18 minutes until crispy. Remove and set aside to drain.
- While bacon is cooking, toss the chopped potatoes in 2-3 tablespoons of bacon grease on the same tray, season with salt and pepper, and roast for 40-45 minutes, stirring halfway.
- Crumble cooked bacon into small pieces. Remove potatoes from oven, top generously with shredded cheese and bacon bits. Return to oven for 2-3 minutes until cheese melts. Garnish with sliced green onions before serving.
