  • 4 ounces bacon chopped
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped, for garnish

Method
 

Preparation Steps
  1. Preheat oven to 400°F (200°C).
  2. Toss baby potatoes with olive oil, garlic powder, salt, and black pepper in a large bowl.
  3. Spread potatoes on a baking sheet in a single layer and roast for 30 minutes, stirring halfway through.
  4. Sprinkle chopped bacon over the potatoes and continue roasting for another 10 minutes.
  5. Remove from oven, sprinkle shredded cheddar cheese on top, and bake for an additional 5 minutes or until cheese is melted and bubbly.
  6. Garnish with chopped parsley before serving.
