Preparation Steps
- To a large skillet, add the oil, chicken, evenly sprinkle with oregano, salt, pepper, and cook over medium-high heat for about 5 minutes, flipping intermittently so all sides cook evenly.
- When chicken is about 90% cooked through, reduce heat to medium-low, add red wine vinegar and lemon juice, and simmer for 1 to 2 minutes until done.
- Set the cooked chicken aside off the heat while you assemble the salad.
- In a large bowl, combine lettuce, tomatoes, cucumber, pita chips, red onions, cooked chicken and juices, and toss gently.
- In a medium bowl, whisk Greek yogurt, grated cucumber, garlic, lemon juice, white wine vinegar, dill, salt, pepper, and sugar to make the tzatziki sauce.
- Drizzle the tzatziki sauce over the salad, mix well, and serve immediately.
