  • 1.5 teaspoon garam masala
  • 2 teaspoons curry powder
  • 1 medium onion, chopped
  • 5 cloves garlic, minced
  • 1 large tomato, chopped
  • 0.5 cup light coconut milk
  • 3 cups chicken thighs, boneless and skinless
  • 1 teaspoon salt, or to taste

Method
 

Preparation Steps
  1. Heat olive oil in a large pot over medium heat. Add onions and garlic; sauté until translucent, about 5 minutes.
  2. Add turmeric, garam masala, and curry powder; cook for 1 minute until fragrant.
  3. Add chopped tomatoes and cook until they soften, about 3 minutes.
  4. Add chicken thighs to the pot, season with salt, and cook until browned on all sides, about 7 minutes.
  5. Pour in coconut milk, stir well, cover, and simmer on low heat for 30 minutes until chicken is cooked through and tender.
  6. Adjust seasoning with salt if needed. Serve hot over steamed rice or with naan.
