  • 1.25 cups semisweet chocolate chips divided
  • 0.75 cup vegetable oil
  • 1 cup granulated sugar
  • 0.666 cup light brown sugar packed
  • 3 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 cup Dutch-processed cocoa powder
  • 0.5 teaspoon kosher salt

Preparation Steps
  1. Preheat your oven to 350°F. Line a 9x9 inch baking dish with parchment paper or lightly grease it.
  2. In a microwave-safe bowl, melt 0.75 cups of chocolate chips with the vegetable oil in 15-second intervals, stirring until smooth. Set aside to cool slightly.
  3. In a large mixing bowl, whisk together the granulated sugar, brown sugar, eggs, and vanilla extract until well combined and slightly frothy.
  4. Pour the melted chocolate mixture into the egg mixture and stir until well incorporated.
  5. In a separate bowl, sift together the flour, cocoa powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  6. Gently fold in the remaining 1.25 cups of chocolate chips and the pitted, halved cherries into the batter.
  7. Pour the batter into the prepared baking dish and spread evenly.
  8. Bake for 30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Allow the brownies to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Optional: top with extra cherries for decoration.
