Preparation Steps
- Preheat the oven to 400°F.
- Bring a large pot with water and 1 teaspoon salt to a boil. Add cauliflower and cook until tender, about 6-7 minutes. Drain well.
- In a large saucepan, melt butter and heat olive oil over medium heat. Add minced onion and sauté for 2 minutes.
- Stir in flour and cook for 3-4 minutes, stirring constantly to cook out the raw flour taste.
- Gradually whisk in milk and cook until sauce thickens, about 2 minutes. Season with salt.
- Remove sauce from heat and stir in shredded cheddar until melted and smooth.
- Mix cooked cauliflower into cheese sauce and transfer to a baking dish.
- Bake for 15-20 minutes until bubbly and golden. Broil for 2 minutes to brown the top if desired.
Notes
Feel free to add a breadcrumb topping for extra crunch.
