  1. Preheat oven to 350F. Line an 8-inch square pan with foil leaving overhang and spray with cooking spray, or grease and flour the pan.
  2. In a large bowl, combine flour, brown sugar, and cut in softened butter until crumbly. Press into the prepared pan to form a crust. Bake for 14-15 minutes, then set aside.
  3. In a mixing bowl, beat cream cheese, sugar, egg, and vanilla until smooth. Pour over the crust.
  4. Peel, core, and dice apples. Toss with sugar, cinnamon, and nutmeg. Spread evenly over the cream cheese layer.
  5. Prepare crumble topping by combining oats, flour, brown sugar, and softened butter until crumbly. Sprinkle evenly over the apples.
