  • 4 cups hearty day old bread
  • 2 Tbsp olive oil
  • 2 large Romaine hearts
  • 0.25 cup finely shredded Parmesan
  • 0.75 cup mayonnaise
  • 1.5 Tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire
  • 4 packed in oil anchovies drained, minced then mashed
  • 0.25 cup finely grated Parmesan
  • 2 cloves garlic minced
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Method
 

Preparation Steps
  1. Preheat oven to 375°F. Spread bread pieces on a baking sheet and drizzle with olive oil. Toss to coat and bake until golden, about 15-20 minutes.
  2. In a bowl, whisk together mayonnaise, lemon juice, Dijon mustard, Worcestershire, minced anchovies, garlic, Parmesan, salt, and pepper to make the dressing.
  3. In a large bowl, toss chopped Romaine lettuce with the dressing until evenly coated. Add croutons and remaining Parmesan cheese, tossing gently.
  4. Serve immediately for the best crispness and flavor.

Notes

For extra flavor, add freshly grated Parmesan on top before serving.
