  • 0.5 cup brown sugar
  • 0.5 cup granulated sugar
  • 1 piece Egg
  • 1 tsp vanilla extract pure
  • 1.25 cups flour
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 0.5 cup quick oats
  • 1 cup mini chocolate chips
  • 1.25 cups crushed Cadbury mini eggs divided

Method
 

Preparation Steps
  1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
  2. Combine butter, brown sugar, and granulated sugar in a stand mixer and beat until light and creamy.
  3. Add the egg and vanilla extract; beat until smooth.
  4. Gradually add flour, baking soda, salt, and oats; mix until combined.
  5. Stir in chocolate chips and 1 cup of crushed Cadbury mini eggs with a spoon.
  6. Scoop dough onto the prepared baking sheet using a 3 tablespoon scoop, spacing 3 inches apart.
  7. Bake for 8 to 9 minutes until edges are golden brown.
  8. Top the cookies with remaining crushed Cadbury eggs.
  9. Cool on the pan for about 10 minutes before transferring to wire racks to cool completely.
