Preparation Steps
- In a slow cooker, combine chicken, onions, celery stalk, garlic, and broth (enough to cover the chicken).
- Cover and cook on high for 4 hours.
- Remove the chicken from the slow cooker, reserve 1/2 cup broth, and discard the rest.
- Shred the chicken with two forks, return it to the slow cooker with 1/4 to 1/2 cup broth and hot sauce, then cook on high for an additional 30 minutes.
- To serve, place 1/2 cup buffalo chicken in each lettuce leaf, top with shredded carrots and celery sides, then drizzle with dressing of your choice.
