  • 6 tablespoons butter melted and cooled
  • 2 large eggs
  • 0.25 cup plain yogurt
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.5 teaspoon salt

Method
 

Preparation Steps
  1. Preheat the oven to 350 degrees F. Grease a 8 1/2 by 4 1/2 inch loaf pan.
  2. In a large bowl, mash the bananas with a fork or pastry blender.
  3. Stir in the melted butter, eggs, yogurt, and vanilla extract.
  4. Add the flour, sugar, baking powder, baking soda, and salt; stir until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for about 55 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
