  • 8 pieces boneless skinless chicken thighs
  • 1 tbsp white vinegar
  • 2 teaspoons sazon
  • 0.5 teaspoon Adobo seasoning
  • 0.5 teaspoon garlic powder
  • 1 tbsp olive oil
  • 0.5 medium onion
  • 0.25 cup fresh cilantro
  • 3 cloves garlic
  • 5 scallions scallions
  • 2 tbsp bell pepper
  • 1 medium vine tomato diced
  • 2.5 cups long grain white rice
  • 4 cups water
  • 1 cube chicken bouillon
  • 2 teaspoons kosher salt or more to taste

Method
 

Preparation Steps
  1. Season chicken with vinegar, sazon, adobo, and garlic powder. Let sit for 10 minutes.
  2. Heat olive oil in a large skillet over medium heat. Brown chicken 5 minutes per side. Remove and set aside.
  3. Sauté chopped onion, cilantro, garlic, scallions, and diced bell pepper in the same pan until soft, about 3 minutes.
  4. Add diced tomato, cook for 1 minute. Stir in rice and cook another minute.
  5. Pour in water, add chicken bouillon cube, and remaining sazon. Stir to combine and dissolve bouillon.
  6. Taste and add more salt if needed. Place chicken on top of rice, bring to a boil.
  7. Reduce heat to low, cover tightly, and simmer for 20 minutes without lifting the lid.
  8. Turn off heat and let sit, covered, for an additional 10 minutes. Fluff rice and serve.
